Lomo Saltado

One of the first dishes that Doug and I ate and could pronounce and totally loved when we were in Peru was Lomo Saltado. That means Jumped Loin. Mmmmm, sounds lovely, I'm sure. It consists of marinated loin fried along with onion and tomato and served on top of rice and french fries (homemade, of course). Nothing finishes it off better than Salsa de Rocoto and we just happened to have some of that on hand. While our friend AnalĂș was visiting in May she made this dish for us and taught me how to prepare it. I cooked it for the first time tonight and it was so good. Doug was elated and even Alyssa, who hates tomatoes, ate it all up.
